This is a tasty and moist chocolate layer cake but instead of butter you use avocado, don’t go running scared just yet, trust us - it tastes delicious! This can also be made vegan friendly if you so desire. We originally made this cake for the Syfy channel website.
2 x 9 inch sandwich cake tins, a blender/hand blender or potato masher, electric or hand whisk.
Cake ingredients:
360g plain flour
6 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
2 teaspoons bicarbonate of soda
400g caster sugar
60ml vegetable oil
1 medium ripe avocado
240ml water
240ml whole milk (Use all water for vegan recipe.)
2 teaspoons vanilla extract
Alien icing:
2 small ripe avocados
2 teaspoons lemon juice
500g icing sugar
1 teaspoon vanilla extract
Firstly preheat your oven to 180C/350F/Gas mark 4
Grease your cake tins with butter or margarine, (Vegetable oil if you want to keep it Vegan.) Flour the tins covering all the surface of the tin. If you want to be extra cautious regarding cakes getting stuck in the pans then cut out a circle of greaseproof paper and put in the bottom of each tin. This will guarantee that your cake will come out!
Peel and remove the stone from 1 medium avocado and use a hand blender (or a potato masher) to puree the avocado flesh.
In another bowl mix together all of the wet ingredients including the avocado then add the sugar to the wet mix.
Mix all of the wet and dry ingredients together with a hand whisk until you have a smooth cake batter.
Once the cakes are done leave them to cool in their tins for at least 15 minutes before turning them out onto a cooling rack, do not try to ice them until they are completely cooled.
Puree the flesh of your 2 avocados, using a blender or hand blender.
Whisk the avocado and lemon juice together for 3-4 minutes until the paste is lighter and smoother.
Add the icing sugar a bit at a time sifting it into the bowl and mixing well in between each addition until all the icing sugar has been added. Only after all the sugar has been added and mixed in add the vanilla extract.
